Copycat Pasta Fagioli Soup – This soup is hearty, filling and healthy. What more could a person want from a soup?

Ingredients:
- 2 stalks celery, chopped
- 1 onion, chopped
- 2 medium tomatoes, peeled and chopped
- 1 can white beans, with liquid
- 1 tablespoon olive oil
- 3 cloves garlic, chopped
- 2 teaspoons dried parsley
- 1 teaspoon Italian seasoning
- ¼ teaspoon crushed red pepper flakes
- 8 ounces tomato sauce
- 14 ½ ounces chicken broth
- Salt and pepper to taste
- 1 cup uncooked spinach pasta
- How to Make Pasta Fagioli Soup
Step 1:
In a large pot or Dutch oven, heat olive oil and add celery and onion
Cook until onion is translucent
Step 2:
Add seasonings and simmer for 5 minutes
Add tomato sauce, chicken broth and tomatoes and simmer for 15 minutes.
Step 3:
Add the pasta and cook for 15 minutes or until the pasta is tender.
Add the can of beans with the juice, stir to combine and reheat.
Step 4:
Sprinkle with grated Parmesan cheese before serving.
Serve with breadsticks or a slice of crusty bread.
Step 5:
You can also cook the pasta separately and add it to the bowl before the soup, this will prevent soggy pasta in the leftovers.
Serve with a sandwich, grilled vegetables or any type of salad.
