Toulouse Cake Ingredients
For the dough:
250 grams of flour
200 grams of sugar
4 eggs
150 grams of unsalted butter (melted)
1 sachet of baking powder (about 10 grams)
1 sachet of vanilla sugar or 1 teaspoon of vanilla extract
1 pinch of salt
100 ml of milk
For decoration:
100 grams of almond powder
150 grams of apple or pear compote
50 grams of sugar (if the compote is unsweetened)
2 tablespoons of amaretto (optional)

Prepare the dough
Preheat the oven:

Preheat the oven to 180°C (thermostat 6).
Beat the eggs and sugar:
In a large bowl, beat the eggs with the sugar and vanilla sugar until fluffy and light.
Add the butter:
Add the cooled melted butter and mix well.
Add the dry ingredients:
In a separate bowl, sift the flour, baking powder and a pinch of salt. Add this dry mixture to the wet mixture, alternating with the milk, and mix until you get a homogeneous dough.
Prepare the filling:
Mix the filling ingredients:
In another bowl, mix the almond powder with the apple juice and amaretto (if using). This will create a fragrant and moist filling.
Assemble the cake
Line the mold:
Grease a cake tin (about 22-24 cm in diameter) and line it with baking paper.
Pour the batter:
Pour half the batter into the bottom of the tin and spread it evenly.
Add the garnish:
