This is the kind of comfort food you can whip up on the weekend.
Ingredients:
For the meatballs:
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 large egg, beaten
- ½ cup breadcrumbs
- ½ onion, grated
- ½ teaspoon garlic powder
- ¼ teaspoon ground nutmeg
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
For the casserole:
- 2 ½ cups egg noodles
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 pint heavy cream
- 1 ½ cups shredded Swiss cheese
- Fresh parsley, chopped for serving
- Kosher salt and freshly ground black pepper to taste
How to Make Swedish Meatballs
Step 1:
Preheat the oven to 375 degrees F. Using nonstick spray, grease a 9×13-inch baking dish and set aside.
Step 2:
Place the beef, bread crumbs, eggs, onion, nutmeg, garlic powder, salt, and pepper in a large bowl. Mix well until combined. Scoop out 1 ½ tablespoons of the mixture and roll into a ball. Repeat with the remaining mixture.
Step 3:
In a large skillet, heat the olive oil over medium-high heat. Add the meatballs to the hot oil and cook until browned on all sides. Transfer the meatballs to a plate and set aside.
Step 4:
Meanwhile, cook the pasta in a large pot of boiling salted water for 2 minutes less than the package directions.
Step 5:
Add the broth, heavy cream, and Worcestershire sauce to the now-empty skillet, scraping up any browned bits from the bottom of the pan. Simmer until slightly thickened, about 10 minutes. Season with salt and pepper to taste. Remove from heat.
Step 6:
In the prepared baking dish, place the pasta and cover with the meatballs. Pour the sauce evenly over the pasta and meatballs and sprinkle with the cheese.
Step 7:
Place the dish in the preheated oven and bake for about 20 minutes or until the cheese is melted and bubbly. Remove from the oven when done and let stand for about 5 minutes.
