- 4 large potatoes, washed and dried
- 2 tablespoons olive oil
- Sea salt

Instructions:
Preheat oven to 425 degrees F (220 degrees C). Place oven rack in middle position to ensure even cooking
Using a fork, prick potatoes several times on all sides, allowing steam to escape during cooking.
Rub each potato with olive oil, this helps to crisp the skin.
Sprinkle the potatoes generously with sea salt, covering them evenly. The salt not only adds flavor to the potatoes, but it also helps to crisp up the skin.
Place the potatoes directly on the middle rack of the preheated oven. You can place a baking sheet or aluminum foil on the bottom rack to catch any drips from the potatoes.
Bake the potatoes for 45 to 60 minutes, or until the skins are crisp and the insides are tender when tested with a fork.
Once the potatoes are done cooking, remove them from the oven and let them rest for 5 minutes. This will allow the insides to firm up and make them easier to handle.
Cut a line along the top of each potato, gently press the edges open, and then puff out the insides with a fork.
