No-Bake Cookie Cake

My son was born a month ago. I asked him what his favorite birthday dessert was and he mentioned a no-bake cookie cake.
I asked more because I wanted to make sure I understood what he was saying.
He expressed interest in making a cake using my no-bake cookie recipe.

My no-bake cookie bar recipe turned the no-bake cookies into bars, but I wasn’t sure how they would turn into a cake. Even though I didn’t know the recipe, I was willing to try it in cake form.

I substituted the no-bake peanut butter cookie recipe for the traditional recipe because my son has a peanut allergy.

Ingredients:

2 cups sugar
1/4 cup butter
3/8 cup milk
1/4 cup cocoa
1 teaspoon vanilla
Use gluten-free quick oats if you are trying to avoid gluten in this recipe. 3 cups quick oat flour
About 3/4 cup chocolate chips

Directions:

Boil the first four ingredients.
Sauté for 30 seconds.
When the chocolate chips are melted, add the oats, vanilla, and chocolate chips. Stir until everything is combined.
Transfer to a round cake pan. A 9- or 10-inch pan works well. (The parchment paper is easier to remove from the pan if you are serving it on a plate or cake platter.)
Refrigerate until firm.
Divide into portions and serve.

It will keep for a few days in the refrigerator.
