- 2 large eggplants
- 1 zucchini
- 2 tomatoes
- 1 red pepper
- 1 yellow pepper

Step 1: Prepare the vegetables
Eggplant: Wash the eggplants and cut them into 1 cm thick slices. Sprinkle the slices with salt and leave them for about 15 minutes to remove any bitterness. After 15 minutes, rinse them with cold water and dry them with a paper towel.
Zucchini: Wash the zucchini and cut it into slices the same thickness as the eggplant to ensure even cooking.
Peppers: Slice the red and yellow peppers after removing the seeds and core.
Tomatoes: Cut the tomatoes into thick slices.
Green onions: Slice the green onions into thin slices. Their mild flavor will pair perfectly with grilled vegetables.
