Lemon Lavender Shortbread

Lemon Lavender Shortbread is a flavor masterpiece that combines simplicity and complexity in a surprising way.

Provencal Biscuits

Ingredients:

110g soft butter
210g sugar
1 egg
1 lemon (juice and zest)
400g flour
1/2 c. coffee powder for rising
A few lavender flowers
100g icing sugar
15g orange liqueur (or filtered lemon juice)

Directions:

Preparation:

Preheat your oven to 180°C.

Beat the soft butter and sugar.

Add the eggs, juice and lemon zest and mix well. (Reserve some zest for icing)

Just add the flour mixture to make a dough ball.

Divide the dough into small portions to form discs 5cm in diameter and 1cm thick (just roll the pieces of dough between your hands and center them with your palm) and arrange on a baking sheet lined with baking paper.

Cooking:

Bake for 12 to 15 minutes.

Let the biscuits cool on the grill.

Glaze:

Mix the icing sugar and liquor (or filtered lemon juice if you prefer alcohol-free). Spread the icing over the cooled cookies and immediately sprinkle with some lavender flowers and lemon peel. Let cool for a few minutes.
