Kielbasa Soup with Peeler

Potato Kielbasa Soup. This soup is a must-have! It’s loaded with crispy sausage slices, tender potatoes, celery, carrots, and onions.

Ingredients

  • 1 pound kielbasa sausage, sliced
  • 2 cloves freshly minced garlic
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • ½ cup thinly sliced ​​celery
  • 2 large carrots, peeled and diced
  • 4 cups chicken broth
  • 1½ pounds diced potatoes
  • ½ cup grated Parmesan cheese
  • 2 cups milk
  • 2 cups grated cheddar cheese
  • ¼ cup coarsely chopped parsley
  • Salt and pepper to taste

Potato Kielbasa Soup

Step 1:

In a large Dutch oven or soup pot, heat olive oil over medium-high heat

Add sausage slices, cook for 5 to 6 minutes.

Remove sausage from Dutch oven and place on heat mark

Step 2:

In the same pot, add onion, garlic, carrots and celery and cook for 2 minutes.

Add chicken stock and potatoes

Bring to a boil then reduce heat to medium-low, cover and simmer for 15 minutes.

Step 3:

Return sausage to pot and add milk, Parmesan and cheddar cheeses and season with salt and pepper.

Stir well and simmer for another 10 minutes over medium heat until cheese is melted.

Remove from heat and garnish with chopped parsley

Serve immediately
