This simple and creamy keto panna cotta is the perfect low-carb dessert. With only 2 grams of net carbs per serving and only 5 ingredients, it’s quick and delicious!

Ingredients:
- 1 tablespoon gelatin (1 envelope)
- 2 tablespoons cold water
- 2 cups heavy cream
- 1 cup milk of choice (such as unsweetened coconut milk)
- 1/3 cup allulose (or your favorite keto sweetener)
- 2 teaspoons vanilla extract
Directions:
Prepare the gelatin:
Grease eight 1/2- or four 1-cup ramekins and set aside. In a small bowl, whisk together the gelatin and cold water. Let sit to thicken.
Heat cream mixture:
In a saucepan, add the heavy cream, milk, allulose, and vanilla extract. Heat over medium heat, stirring regularly, until it begins to boil. Once boiling, reduce heat to very low and simmer for a few minutes.
Incorporate with gelatin:
Remove sauce from heat and whisk in thickened gelatin mixture until fully incorporated and smooth.
Distribute:
Pour panna cotta mixture into prepared ramekins and allow to cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight until firm.
Serve:
To serve, run a slightly wet knife around the edges of the ramekins for easy removal. Invert each ramekin upside down onto a plate and enjoy your keto panna cotta!
