Homemade Turtle Soft Candy is so easy to make, and it features clusters of homemade microwave caramel and toasted walnuts, dipped in chocolate. It might be the best homemade candy you’ve ever had!
Ingredients:
- 12 ounces soft caramel (homemade or store bought)
- 6 ounces pecans (half toasted)
- 8 ounces chocolate (semi-sweet, chocolate chips are fine)
How to Make Turtle Soft Caramel Candy at Home:
Prepare a cookie sheet by lining it with aluminum foil or parchment paper, then spray the foil or parchment paper with nonstick cooking spray.
Arrange the walnuts in groups of 4 with each walnut pointing in a different direction (like the legs of a turtle).
Or you can drop them in small clusters onto the baking sheet.
Unwrap the caramel if it’s wrapped, then place it in a microwave-safe bowl.
If it’s too firm, add a spoonful of water to make the final product smoother. Microwave until melted, stirring every 30 seconds.
Leave the caramel to cool slightly, so it’s not too hot, then use a small dessert spoon or scoop to drop a spoonful of caramel into each set of walnuts.
This candy is meant to be a rustic treat, so don’t worry about the turtles sticking around or some walnuts coming through.
Melt the chocolate chips in the microwave or over a double boiler.
Place the melted chocolate on top of the caramel layer, letting some drip down the sides, then push it around until it completely covers the top of the caramel.
Refrigerate the baking sheet until the chocolate and caramel are completely set, at least 30 minutes.
For best taste and texture, serve the turtles at room temperature. Any leftovers can be stored in an airtight container in the refrigerator or at cool room temperature for up to two weeks.
