Follow these simple steps to make homemade chunk ice cream at home:
Heat the basic mixture: In a saucepan over medium heat, combine the milk, cream and sugar. Stir constantly until the sugar has completely dissolved. Avoid letting the mixture boil or the ice cream will change its consistency.
Add the yolks: In a separate bowl, lightly whisk the egg yolks. Gradually add a little of the hot milk and cream mixture to the yolks, whisking constantly to smooth them out. Then return the yolk mixture to the pan and cook over low heat until slightly thickened, stirring constantly.
Add the vanilla: Once the mixture has thickened, remove from the heat and add the vanilla essence. Mix well and allow to cool to room temperature before refrigerating for at least 2 hours.
Add the chips: When the ice cream base has cooled, add the chocolate chips and nuts (if using). Stir to distribute them evenly throughout the mixture.
Freeze: If you have an ice cream maker, pour it into the container and follow the machine’s instructions. If you don’t have one, simply place the mixture in an airtight container and freeze for about 4 hours, stirring every 30 minutes for the first 2 hours to prevent ice crystals from forming.
