Ingredients:
1 tablespoon olive oil
1 large onion, diced
1 red, orange or yellow bell pepper, diced
4 cloves garlic, minced
1 kosher salt and freshly ground black pepper
2 tablespoons tomato paste
2 tablespoons chili powder
1 1/2 teaspoons dried thyme
1/2 teaspoon ground cumin
4 cups low-sodium vegetable broth
2 14.5-ounce cans diced, roasted tomatoes
1 can navy beans (15 ounces) or other small white beans (do not drain)
