Ingredients:
- 1 ½ cups flour (200 grams)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 3 large eggs
- 1 cup brown sugar (200 grams)
- 1/2 cup vegetable oil (120 ml)
- 1/2 cup yogurt (120 ml)
- 1 teaspoon vanilla
- 1 ½ cups grated carrots (about 3 large carrots)
- 1/2 cup chopped walnuts (50 grams)
- 1/4 cup raisins (optional)
Method:
Preheat the oven to 180°C (350°F) and prepare a cake tin by greasing it with a little oil and dusting it with flour or lining it with parchment paper.
In a large bowl, mix together the flour, baking powder, bicarbonate of soda, salt, cinnamon, and nutmeg.
In another bowl, beat the eggs with the brown sugar until the sugar dissolves, then add the oil, yogurt, and vanilla and mix well.
Gradually add the dry ingredients to the wet ingredients and mix until combined. Next, add the grated carrots, walnuts, and raisins if you like.
Pour the mixture into the prepared tin and bake for 30-35 minutes or until the cake is cooked through (you can test for doneness by inserting a wooden skewer into the cake, if it comes out clean it is done).
Cool and decorate: Allow the cake to cool completely before decorating it with cream cheese and sprinkling the chopped walnuts on top.
For decoration (optional):
Cream cheese (mix 200 grams of cream cheese with 1 cup of powdered sugar and 1 teaspoon of vanilla)
