Corn Empanadas with Swiss Chard

Dough:

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/3 onions, chopped or fresh
  • 1 cup cooked Swiss chard
  • 1 egg
  • 1 tablespoon oil

Filling:

  • 2 red onions
  • 4 medium corn (or 2 cans)
  • 150 grams light cream cheese

Dough:⁣


Beat the eggs, onion, chard, oil, salt then add the flour to form the dough.

The chard must be pre-cooked and make sure it does not contain too much water. ⁣

If the dough is still too wet, add more flour. ⁣

Leave it to rest in the fridge for 30 minutes. ⁣

Stretch and make circles. You can use a pastry mold if you don’t have one. ⁣

Filling:⁣

  • Fried onions with water. ⁣
  • Add the pre-cooked corn. ⁣
  • Add the cheese. ⁣

Mixture⁣
Season to taste with salt and pepper. ⁣

Tip to assemble, it is recommended to wait until the filling cools so that the dough does not soften!⁣
