Steps:
Topping:
Preheat the oven to 180°C.
In a small saucepan, melt the butter over medium heat and add the brown sugar. Stir until the sugar melts and the mixture is caramelized. Pour this mixture into the bottom of the cake pan.
Arrange the pineapple slices over the brown sugar in the pan. If using cherries, place a cherry in the middle of each pineapple slice.
Prepare the cake batter:
In a bowl, mix together the flour, baking powder, and salt and set aside.
In another bowl, beat the butter and sugar until light and fluffy.
Add the eggs one at a time while continuing to beat, then add the vanilla.
Alternately, add the flour mixture and milk with the pineapple juice to the butter and sugar mixture, starting and ending with the flour. Mix until combined.
Assemble and bake:
Pour the cake batter evenly over the pineapple in the pan.
Bake the cake in the oven for 35-40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
After baking, let the cake cool in the pan for 5-10 minutes, then carefully invert the pan onto a serving plate.
Serving:
Serve the pineapple upside down cake warm or at room temperature, and you can add a little whipped cream or ice cream for extra deliciousness!
Enjoy!
