Ingredients:
- 1 medium zucchini, grated or chopped
- 4 large eggs, beaten
- 1 bell pepper, chopped
- 2 small tomatoes, chopped
- 2 green onions, chopped
- 1 cup cottage cheese
- 1 cup shredded mozzarella cheese

Directions:
Step 1: Prepare the Vegetables
Grate or chop the zucchini, and chop the bell pepper, green onions, and tomatoes.
Step 2: Combine
Add the beaten eggs, chopped zucchini, bell pepper, green onions, tomatoes, cottage cheese, and mozzarella.
Season:
Season the mixture with salt, black pepper, dried garlic, and Italian herbs.
Mix everything together until well combined.
Step 3: Bake the Dish
Preheat the oven to 180°C (360°F).
Pour the mixture into a greased or parchment-lined baking dish.
Bake:
Bake in the preheated oven for 45 minutes, or until the casserole is cooked through and golden brown on top.
Step 4: Serve
