Ingredients:
1 apple, peeled and grated
1 egg
2 tablespoons sugar
A pinch of salt
150 grams (2/3 cup) yogurt
140 grams (4.93 ounces or 2/3 cup + 1/4 cup) all-purpose flour
1/2 teaspoon baking powder
Directions:
- Prepare the batter:
Grate the apple:
Peel and grate one apple into a bowl.
Mix the wet ingredients:
In a separate large bowl, whisk together 1 egg, 2 tablespoons sugar, a pinch of salt, and 150 grams of yogurt until well combined.
Combine the dry ingredients:
In another bowl, mix 140 grams of flour with 1/2 teaspoon baking powder.
Combine the wet and dry ingredients:
Add the dry ingredients to the wet ingredients and stir until well combined. Gently fold in the grated apple. The batter will be thick, but that’s okay.
- Cook the pancakes:
Heat a nonstick skillet or frying pan over medium heat and lightly grease with oil or butter.
Pour small amounts of batter into the hot pan (about 2-3 tablespoons per pancake).
Cook for 2-3 minutes on each side until golden brown and cooked through.
