For the dough:
- Eggs: 2
- Sugar: 2 tablespoons
- A pinch of salt
- Kefir: 250 ml
- Semolina: 250 g
- Baking soda: 1 teaspoon
Method:
Preparing the dough:
In a large bowl, whisk the eggs with the sugar and a pinch of salt until smooth.
Add the kefir to the egg mixture and mix well.
Add the semolina and baking soda, and mix until smooth and homogeneous.
Cooking:
Heat a non-stick frying pan over medium heat, and if necessary, grease it with a little oil or butter.
Pour a small amount of the mixture into the hot frying pan, and form small discs.
Cook the pancakes for 2-3 minutes on each side, until golden brown and cooked through.
Repeat until all the batter is used.
Serving:
Serve the pancakes hot, accompanied by jam, syrup, fresh fruit or yogurt as desired.
Tips:
Make sure to mix the semolina well to avoid lumps.
The pan should not be too hot to avoid burning the pancakes.
