Chicken Sausage and Vegetable Skillet

Ingredients:

  • 1 (12-14 oz.) package chicken sausage
  • 2 bell peppers (yellow, orange, or red), sliced
  • 1 onion, chopped
  • 3 red potatoes, sliced
  • 1 zucchini, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter

Instructions:

Heat olive oil and butter in a large skillet over medium-high heat.

Add chicken sausage to skillet and cook until browned on all sides, about 5-7 minutes. Remove sausage from skillet and set aside.

In same skillet, add bell pepper, onion, and potatoes and cook for 5-7 minutes, or until vegetables are slightly tender.

Add zucchini and garlic to skillet, and cook for an additional 2-3 minutes, or until zucchini is tender.

Slice chicken sausage and add back to skillet with vegetables.

Sprinkle garlic powder, Italian seasoning, paprika, salt, and black pepper over skillet and stir to combine.

Cover skillet and cook for 5-7 minutes, or until vegetables are tender and sausage is heated through.

Serve chicken sausage and vegetables from skillet hot, garnished with fresh herbs, if desired.
