Ingredients:
- 1 3/4 cups (230g/8.1oz) cake flour
- 1/2 teaspoon baking powder
- 1 cup (250g/8.8oz) butter
- 1 cup (200g/7oz) caster sugar
- 5 eggs
- 1 teaspoon vanilla extract
- 1/4 cup (59ml) milk
Instructions:
This soft and moist cake is easy to make. The cake is very moist and soft. In a large bowl, sift 230g (8.1oz) all-purpose flour, add 1/2 teaspoon baking powder.
Sift the flour 2-3 times. This will introduce a lot of air into the batter, set aside.
In another bowl, add 1 cup (250g/8.8oz) salted butter, if using unsalted butter add 1 1/4 teaspoons salt to the dry ingredients.
The butter should be at room temperature, beat the butter until very soft then add 1 cup of sugar and start beating the butter and sugar on low speed for about 2 minutes.
Scrape down the sides and continue beating the mixture for 15 minutes. One of the basic tips in their recipe is to beat the butter and sugar well until the mixture is pale.
Once the mixture is well beaten, start adding 5 eggs one at a time and beat each egg until it is incorporated into the mixture before adding the next egg.
Add the vanilla extract and beat for a minute, if you like a buttery flavor you can leave out the vanilla extract. Add the sifted dry ingredients to the butter mixture spoon by spoon. Continue stirring.

After adding half of the dry ingredients, bring the milk and pour half of the milk into the mixture and mix and continue adding the dry ingredients.
Mix the ingredients until the mixture is thick then add the remaining milk and beat the mixture until it is light and fluffy without lumps. To bake, you will need a 7×7 square pan greased and lined with parchment paper.
Pour the batter into the prepared cake pan, smooth the top, and bake in a preheated 320°F (160°C) oven for 55 to 65 minutes, but start checking the cake after 50 minutes.
The cake should be done until golden brown and a toothpick inserted in the center should come out clean or with a few moist crumbs. Let cool in the pan for about 10 minutes, then invert onto a wire rack, slice, and serve. Enjoy.
