Garlic Chicken with Broccoli and Spinach
Ingredients:
- 4 chicken breasts, sliced
- 3 cloves garlic, minced
- 2 cups broccoli, cut into florets
- 2 cups fresh spinach
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Juice of half a lemon
- Salt and pepper to taste
- 1/4 cup chicken broth
Directions:
In a large skillet, heat the olive oil over medium heat.
Add the chicken strips seasoned with salt, pepper and paprika. Cook the chicken for 5-7 minutes until golden brown and cooked through.
Remove the chicken from the pan and set aside.
In the same pan, add the minced garlic and stir for 1-2 minutes until fragrant.
Add the broccoli and sauté for 3-4 minutes until tender but still crunchy.
Add the chicken stock and fresh spinach.
Cook for a further 2 minutes, or until the spinach is wilted.
Return the chicken to the pan, mix well and add the lemon juice.
Cook for a further 2-3 minutes to allow the flavours to combine.
Serve hot and enjoy this healthy and delicious dish of garlic chicken with broccoli and spinach.
