Potato Arepas (Potato Fritters)

Ingredients:

1 kg potatoes (potatoes)
2 tablespoons butter
1/2 cup grated cheese (it can be mozzarella, fresh cheese or soft cheese)
Salt to taste
Pepper to taste
Oil for frying

Instructions:

Cook the potatoes: Peel the potatoes and boil in salted water until tender (about 20 minutes).

Mash: Drain the cooked potatoes and mash with a masher or fork until smooth. Add the butter and grated cheese to the mash. Mix well until combined. Season with salt and pepper to taste.

Make the patties: Take small portions of the mashed potatoes and shape them into balls. Then flatten them with your hands to form patties or arepas.

Fry: Heat a little oil in a large skillet over medium heat. Place the patties in the skillet and fry on both sides until golden and crispy (about 3-4 minutes per side).

Serve: Serve the patties hot with cheese, butter or your choice of sauce.
